Our cuisine aims to express concreteness, simplicity and warmth: concepts belonging to Sicilian culinary culture, far from mere refinement. A km 0 cuisine that values seasonality and authenticity; each dish is born from the encounter between ancient recipes and carefully selected local products. Here tradition meets hospitality, transforming every moment into a convivial, intimate and sincere experience.

OUR PASTA
Wheat, flour, dough and then pasta… Secrets of Fontes Episcopi
Fontes Esculapio, which joins the Diodoros project, was born from the union of myth, legend, science and respect for the land, giving birth to the first pasta made with native grains grown in the historic Valley of the Temples in Agrigento. This project is the result of the love for the land and the tradition of the Tedesco family, which for generations has guarded a part of the Valley, next to the temple of Asclepius, an ancient place of worship dedicated to healing. The company “Natura e Benessere,” , founded by the Tedesco brothers, has revived this tradition. Growing four varieties of Sicilian grains-Perciasacchi, Bidi, Russello and Timilia-inspired by Empedocles’ four elements, they have skillfully combined tradition and innovation to create a product that honors 2,500 years of history. The grains grown in the Garden of Aesculapius, a sacred site of ancient Akragas, are processed by stone milling, preserving the wheat germ and offering a unique and prized pasta, rich in fiber, minerals and antioxidants.
